- What is it good for?

Because the range of tapas dishes tend to just arrive whenever they're ready, conversation flows without the predictable interruptions of starter, main course and dessert. This gives briefings a more organic feel, while shuffling the plates around proves an interesting power exercise ... Who gets that last croqueta?

- Signature dishes

Generally anything based on seafood or pork and if you see the word Iberico, order two. If you feel brave, perhaps a whole suckling pig?

- Who's the boss?

The Nottingham-born Hart brothers, also responsible for Quo Vadis and Barrafina.

- Tips please?

There's no need to order everything up front. Just see how things are going and select dishes wisely to extend or accelerate the meeting.

- What's the damage?

£15-20 per head, which works out well when you consider you'll taste most of the menu.
