- What's it good for?

Ullinish Country Lodge is an unusual and unique way of impressing any 'foodie' client. The modern French cuisine is complemented by the fresh Skye ingredients. It is also great for a relaxing break away or as a base to explore Scotland's Highlands and Islands.

- Signature dishes

The regularly changing seasonal menu includes fantastically innovative dishes, such as Loch Harport lobster grilled with Orbost herb butter, crispy pig's head with local oysters and Stornoway black pudding. But what sets Ullinish apart is head chef Bruce Morrison's flair for the unusual. The pre-dessert appetisers include an edible paint palette of multi-flavoured sorbets.

- Who's the boss?

Bruce Morrison, who was awarded Rising Star Hotel Chef of the Year 2008 by Hotel Review Scotland. Pam and Brian Howard purchased Ullinish in 2004 and completely refurbished it.

- Tips please?

Make a weekend of it; with plenty of activities and so many gastronomic delights it is best to visit Ullinish for a night or two, but book early - with only six rooms it fills up.
